Cherry Raisin Oatmeal Bars

Today I'd like to introduce you to Cherry Raisin Oatmeal Bars; an easy and flavorful favorite recipe from my favorite cooking site, allrecipes.com.  The original recipe has been changed very slightly to fit my tastes. 

 
You will need a bowl, spoon, fork, knife, 1/2 teaspoon, 1/2 cup, and a 9x14 baking pan.  Keep dishes to a minimum. When recipe calls for 1 tsp., use the 1/2 tsp. twice.  Preheat oven to 350 F.

Mix together 1/2 cup brown sugar, 1/2 cup butter, 1/2 cup flour, and 3/4 cups oats with fork until crumbly.  Press into cake pan and bake for 15 minutes.
While bottom layer is baking, beat together 2 eggs, 1 cup brown sugar, 1/2 cup flour, 1/4 tsp. salt, 1/2 teaspoon baking powder, and 1 teaspoon vanilla extract in the same bowl until well blended.  Stir in 3/4 cup raisins, 1/2 cup flaked coconut, and 1/2 cup pitted Maraschino cherries, cut in half.
 
Take the bottom layer out of the oven, spread the cherry raisin mixture over it and bake for 30 minutes until firm and lightly browned.  Cool and enjoy the goodness of cherries, raisins, coconut flakes, and oatmeal all in every square!

    i love to share thoughts and information. i am always flattered, like wow, when someone asks. i use a nikon dsl and do like to switch up my lens depending on the subject of my photograph. i am no photographer, just a girl who likes to take pictures!!!

    1. Ah, I know what you mean as I used to dislike raisins in cooking--they grew on me though! In this recipe I think they could be easily omitted. Thanks for the tip on the recipe notebook; sounds very convenient!
